การวิจัยนี้มีวัตถุประสงค์ 1) เพื่อศึกษาแนวคิดของผู้บริโภคในการพัฒนาแผ่นเกี๊ยว 2) เพื่อศึกษาสูตรที่เหมาะสมในการผลิตผลิตภัณฑ์แผ่นเกี๊ยวจากแป้งทนย่อย 3) เพื่อศึกษาสมบัติทางกายภาพ เคมี จุลินทรีย์ และการยอมรับของผู้บริโภคผลิตภัณฑ์แผ่นเกี๊ยวจากแป้งทนย่อย
การศึกษาแนวคิดในการพัฒนาผลิตภัณฑ์แผ่นเกี๊ยว กลุ่มตัวอย่างที่ใช้ในการศึกษา คือ กลุ่มผู้บริโภคที่มีอายุ 20 ปีขึ้นไป จำนวน 100 คน โดยใช้แบบบสอบถาม การศึกษาสูตรที่เหมาะสม ในการผลิตแผ่นเกี๊ยวปราศจากกลูเตนจากแป้งทนย่อย โดยวางแผนทดลองแบบผสม ปัจจัยที่ทำการศึกษามี 3 ปัจจัย ได้แก่ ปริมาณแป้งกล้วย ร้อยละ 50-70, ปริมาณแป้งข้าว กข 43 ร้อยละ 10 – 20 และปริมาณแป้งมันดัดแปร ร้อยละ 10-20 จะได้สูตรแผ่นเกี๊ยวทั้งหมด 7 สูตร ทำการคัดเลือกสูตรโดยพิจารณาจากคุณภาพทางกายภาพ และทดสอบความชอบ จากนั้นศึกษาคุณภาพ ทางกายภาพ โภชนาการ จุลินทรีย์และการยอมรับของผู้บริโภคต่อผลิตภัณฑ์แผ่นเกี๊ยวปราศจากกลูเตนจากแป้งทนย่อย และศึกษาต้นทุนการผลิตของแผ่นเกี๊ยวปราศจากกลูเตนจากแป้งทนย่อย
ผลการวิจัย พบว่า สูตรที่เหมาะสมในการผลิตแผ่นเกี๊ยวปราศจากกลูเตนจากแป้งทนย่อย คือ สูตรที่ 7 ประกอบด้วย แป้งกล้วย ร้อยละ 60 แป้งข้าว กข 43 ร้อยละ 20 และแป้งมันดัดแปร ร้อยละ 20 คุณภาพทางกายภาพ มีค่าแรงตัด 216.68 กรัม ค่า a[subscript w] 0.82 ค่า L* a* b* 66.82, 0.73 และ -1.70 ตามลำดับ คุณค่าทางโภชนาการ โปรตีน 13.98 กรัม คาร์โบไฮเดรต 19.74 กรัม ไขมัน 5.11 กรัม เถ้า 2.66 กรัม ใยอาหาร 7.58 กรัม ค่าความชื้น ร้อยละ 21.16 และปริมาณ แป้งที่ทนต่อการย่อย ร้อยละ 17.75 นำไปทดสอบคุณภาพทางจุลินทรีย์ พบว่า อยู่ในเกณฑ์มาตรฐานผลิตภัณฑ์ชุมชนเส้นบะหมี่สด (มผช.732/2552) เมื่อนำไปทดสอบการยอมรับของผู้บริโภค พบว่า มีค่าความชอบโดยรวมอยู่ในระดับปานกลาง และถ้ามีแผ่นเกี๊ยวปราศจากกลูเตนจากแป้งทนย่อย วางจำหน่ายผู้บริโภคซื้อ คิดเป็นร้อยละ 78 และต้นทุนการผลิตแผ่นเกี๊ยวจากแป้งทนย่อย ต่อ 100 กรัมเท่ากับ 20 บาท
Abstract
This research aimed to: 1) study consumer perceptions for dumpling sheet development, 2) determine the optimal formula for producing dumpling sheets made from resistant starch, and 3) investigate the physical, chemical, and microbiological properties as well as consumer acceptance of dumpling sheets made from resistant starch.
The study of product development concepts involved 100 consumers aged 20 years and above using questionnaires for data collection.The investigation of optimal formulations for gluten-free dumpling sheets made from resistant starch was carried out using a mixture design with three components: banana flour (50–70%), RD43 rice flour (10–20%), and modified tapioca starch (10–20%). This resulted in seven different formulations. The most suitable formulation was selected based on physical quality and consumer preference tests. Subsequently, the physical, nutritional, and microbiological properties, as well as consumer acceptance and production costs of the gluten-free resistant starch dumpling sheets were analyzed.
The results indicated that formulation 7, consisting of 60% banana flour, 20% RD43 rice flour, and 20% modified tapioca starch, was the most suitable for producing gluten-free dumpling sheets from resistant starch. The physical characteristics included a cutting force of 216.68 grams, water activity (a[subscript w]) of 0.82, and L*, a*, b* values of 66.82, 0.73, and -1.70, respectively. The nutritional values were 13.98 grams of protein, 19.74 grams of carbohydrates, 5.11 grams of fat, 2.66 grams of ash, 7.58 grams of dietary fiber, 21.16% moisture content, and 17.75% resistant starch. Microbiological analysis showed compliance with the Thai Community Product Standard for fresh noodles (TCPS 732/2552).Consumer acceptance testing indicated a moderate level of overall preference. Additionally, 78% of consumers indicated a willingness to purchase the gluten-free dumpling sheets made from resistant starch if they were commercially available. The production cost was estimated at 20 THB per 100 grams of resistant starch dumpling sheets.
